In addition, each of the blades in the CLASSIC Demi-Bolster Blade Assortment is 20% lighter than its counterpart in the CLASSIC collection, making it as light and agile as it is comfortable. CLASSIC knives feature WSTHOFs patented Precision Edge Technology, (PEtec). WSTHOFs newest state-of-the-art technology, Precision Edge Technology incorporates a new computer controlled method for putting the edge on forged knives. With this patented technology, the knives are made 20% sharper to 14 degrees per side (10 degrees per side on Asian-style blades).
